Taking the test in April and having a score release in May ensures that you are still able to submit during that ideal time. Still pretty risky if you have no idea what you'll get. MCAT scores take a month to come out, you prob won't know your score until you're 3/4 of the way done with your applications.Then consider a retake if you find majority of your desired schools don't accept scores lower than 125 in one section. Based on the GPA/MCAT grid, you have >70% chance of an acceptance with those stats. Retaking a 514 for the sake of CARS is too great a risk. Had just about the same score breakdown.
