I ran both a dual crossbow/thief bard and titanstring gloomstalker/assassin in my second honour run. Gloomstalker was worse on Raphael, Ansur, Netherbrain, Steel Watchers, Ethel, and Myrkul phase 2. It shined on Viconia, Mystic Carrion, Lorroakan, Gortash, and Yurgir. But the only harder fight in that group is Viconia.

Initiative is really important for an archer build. Another alternative is 6 Swords / 3 Gloom Stalker / 3 Battle Master. It’s hella dumb, but you make a reckless attack in melee, and you use your second attack and two bonus actions offhand hand crossbow attack.You can't one hand crossbows period - they are two handed weapons. You can one hand hand crossbows which are different than light/heavy crossbows. Loading and ammo tags don't do anything in bg3. There is one handed HAND crossbow and two-handed LIGHT crossbow.
